A coffee Legacy in the Heights of Apia

 

In the mountains of Apía, Risaralda, at 1,860 meters above sea level, where the mist caresses the coffee plants at dawn, Lina Isabel Restrepo cultivates more than just coffee: she cultivates history, passion, and tradition.

From Finca El Jazmín, in the trail of the same name, Lina has continued her family’s legacy, being the fourth generation of coffee producers. Her love for the land and the bean is no coincidence; it is the result of years of learning, dedication, and a deep respect for every tree that blooms on her farm. With 18,000 trees of the Castillo and Supremo varieties, Lina has perfected each stage of the process to obtain an exceptional cup, with caramelized and fruity notes that delight those fortunate enough to taste her coffee.

The process on the farm is meticulous. Harvesting takes place every 15 to 20 days, ensuring that each bean reaches its optimal ripeness, infused with natural sugars. The coffee then undergoes 72 hours of fermentation in cherry and after coffee cherries are depulped, the beans are typically fermented for 72 hours, a process that highlights its unique sensory profiles. Finally, the drying is done in solar drying racks and in aerators that allow precise temperature control, thus ensuring the quality of the bean.

Thanks to her dedication and knowledge, Lina Isabel and her coffee have received multiple regional and national recognitions, a reflection of the effort and passion she puts into each harvest. But beyond the awards, her greatest pride is keeping her family’s essence alive: a tradition that is savored in every sip and continues to evolve with her love for coffee.
