Precision, Tradition, and Innovation in Every Cup
Located in the Pavero district, Finca La Divisa is a reflection of commitment to quality and coffee tradition. With 34,000 coffee trees, the farm grows internationally recognized varieties such as Castillo, Gesha, Bourbon Rosado, and Bourbon Amarillo. Although it was acquired 12 years ago, its legacy dates back to 1942, when the current owner’s mother began this family story in the world of coffee.
At the helm of this project is Oscar Restrepo, who has perfected his technique in the rigorous selection of cherries, ensuring a meticulous harvest that guarantees only the highest quality fruit. This dedication extends to his drying process, designed to precisely control the temperature, which allows for thedevelopment of complex and stable profiles, enhancing the natural sweetness and bright acidity of his coffees.
From the beginning, the Restrepo family has embraced innovation, exploring different processing methods to offer unique cup experiences. Among the processes used are natural, washed, and honey, all carefully executed with marquesina drying, which highlights the best qualities of each variety.
